Prized for its delicious, firm flesh and versatility in numerous recipes, chefs and fishmongers alike regard Dover Sole as a prince among flatfish. Supplied as a whole fish, gutted, trimmed and top-skinned.
Please note that, because fish naturally vary in size, we will always adhere to the pack weights given for ‘whole’ fish. At times, one large whole fish will be enough to make up the weight, at other times it may be two or more smaller fish; so, although the number of fish supplied may change between orders, the weight received will always remain the same. Please be aware that a description of a fish as ‘boned’ means that, although the fishmongers will have removed the bones to the best of their ability, we cannot guarantee that any piece of fish will be entirely bone-free.
Our fishing vessels work out of Exmouth, Brixham and Newlyn, and operate in accordance with the Seafood Responsible Fishing Scheme. They keep us well topped up most days with a selection of fresh fish and shellfish, and a catch can often be on its way to the Greendale farm shop within hours of leaving the sea. If we can’t catch it ourselves, we source only from trusted suppliers with standards as high as our own. The fish available may vary, depending on the season, but a delicious variety is always to be found on our fish counter. From whole fish to fillets, live lobsters to shrimp, our wide selection is sold in a choice of portion sizes and prepared for your convenience by our skilled fishmongers.
Dover Sole has medium-brown mottled skin with a lighter underside. ‘Top-skinning’ is the traditional method for skinning this fish – it simply means we’ve removed the brown skin but left the lighter skin underneath intact.
Grilled, pan-fried, poached or roasted, Dover Sole is a really versatile fish to cook, though it seems to work best in simple recipes that allow its flavour to shine. The classic French recipe, Sole à la Meunière, is a great example; the fish is dredged in flour, pan-fried and served with a butter, lemon juice and parsley sauce.

Our delivery service operates overnight for your next-day delivery. If an order is placed before 2pm, fresh produce from Greendale’s Farm Shop can be delivered to your door the next day. You can even specify whether you’d like it delivered in the morning or on an alternative day (Tuesday to Saturday). You can use our click-and-collect service to make sure you don’t miss out on the best cuts from our Butchers or our freshly caught fish of the day. Whether you’re ordering in your lunch break and collecting after work, or browsing and ordering from home and collecting your shopping during the school run, our Click and collect service is there for your convenience. You can order online, collect your order from the shop when it suits you – and perhaps take a relaxing break at our Farm Shop Café, too.
Meat and seafood will be bagged and ready to cook or freeze on delivery. All your fresh meat and fish will be vacuum packed, all labelled with use by dates and a suggested frozen shelf life, packaging or labelling may change depending on preparation or delivery limitations. Once the meat or fish has been packaged to keep it in prime condition we will place it into an insulated polystyrene box. The produce will be surrounded with chilled gel packs to keep it cool and in perfect condition.
