Cut from the lean ‘eye’ meat of the loin, our boneless lamb noisettes are carefully rolled and then wrapped in a layer of fat to ensure the meat stays moist and flavourful during cooking.

Origins

Greendale lamb comes from our own flock of breeding ewes, which are predominantly traditional breeds such as Suffolk's and continental X's. After enjoying spring and summer grazing on the rich pasture at our East Devon farm, our lambs are carefully selected when they reach the correct weight - they travel just eight miles to a local abattoir, the short journey helping to keep stress to a minimum. Hung for a minimum of ten days, the meat becomes even more flavoursome and tender. Our master butchers then prepare it on-site at Greendale Farm Shop, skilfully turning it into plump chops, classic roasts, burgers, meatballs and much, much more.

Butcher's Tips

Also known as ‘medallions’, noisettes are one of the few fully boned cuts from this part of the animal. They’re prized for their tenderness and flavour, and will cook in minutes.

How to Cook

To pan fry your lamb noisettes, rub them with a little olive oil. Add a splash of oil to your pan and place it over a medium to high heat; when the oil begins to smoke, add the noisettes. Cook for 5-6 minutes on each side, turning regularly, until cooked to your taste. Remove from the pan, leave to rest for a couple of minutes, then serve and enjoy!

Local Delivery £4.95 - We offer a local delivery service for customers living in the EX1 to EX15 postcode areas. Choose from ‘Same day’ (orders placed by 12pm), ‘Next day’ (orders placed by 2pm) or ‘Specified day’ delivery.

Standard National Delivery From £7.95 - Order before 2pm and receive your items the next day, between 8am and 8pm. You can also specify whether you’d like it delivered in the morning or on a different day (Tuesday to Saturday).

Fresh Greendale Produce - Meat and seafood will be bagged and ready to cook or freeze on delivery. All fresh meat and fish will be vacuum-packed and labelled with use-by dates and a suggested frozen shelf life. Packaging or labelling may change depending on preparation or delivery limitations. When the meat or fish has been packaged it is immediately placed in an insulated polystyrene box and surrounded with chilled gel-packs to keep it cool and in perfect condition.
