Hand-cut from prime, lean Greendale beef, these handy cubes are just the right size for threading on to kebabs and sizzling on the barbecue (or under a hot grill if it’s a traditional British summer!).
We raise our own beef cattle on our family farm in East Devon, where the pastures overlook the Jurassic coast. From our careful breeding program to the home-grown diet our animals receive, the management of our herd is carried out according to strict animal welfare guidelines, including those required by the Red Tractor Food Assurance Scheme. We use an abattoir less than eight miles away from our farm, minimising this potentially stressful journey for the animals; on reaching Greendale Farm Shop, each carcass is hung and dry-aged for a minimum of three weeks, to allow it to mature, then expertly prepared by our skilled butchers. We take great pride in all our beef here at Greendale – not only because it’s exceptionally delicious and tender, but also because it’s fully traceable back to our farm.
At Greendale we love a good marinade – you can have great fun experimenting with your favourite oils, herbs and spices. For example, a mixture of oil, lemon juice, rosemary and garlic (plus salt and pepper) sounds simple, but will elevate your kebabs to a whole new level – leave the kebab cubes marinating in this overnight, then barbecue them and see for yourselves!
To make simple kebabs, pre-soak wooden skewers in warm water for a minimum of two hours, then chop bell peppers and red onion into fairly large chunks (big enough to stay on the skewer). Thread the veg and beef cubes on to the skewers, alternating them, until they’re all used up. Drizzle the kebabs with a little oil, then place under a hot grill or over really hot charcoal and cook for about 15 minutes, turning regularly. When you are sure that the meat is cooked through, and any juices run clear, remove from the heat and serve straight away with some warm flatbreads.
