Eating Seasonally: Beetroot
A welcome hit of colour and sweetness.
The deep red flesh and sweet, earthy taste of this distinctive root vegetable make a wonderful central ingredient in traditional hearty soups, such as Borscht, though Beetroot is also equally delicious in less conventional recipes, such as Beetroot and Chocolate Brownies. Raw Beetroot can be grated into salads, where its bright colour and juicy sweetness make a brilliant addition, or juiced for a healthy drink; Betacyanin, the pigment that gives beetroot its beautiful colour, is also a powerful antioxidant.
